Creamy avocado rounds it all out, and the bright Lemon-Basil Vinaigrette ties it together in the best way. It comes together in under 20 minutes and is the kind of dish that disappears fast at any table.
BLTA SUMMER SALAD
Ingredients
The Salad Base
8 slices thick-cut bacon, cooked crispy and chopped
2 heads Romaine lettuce, washed and chopped
2 cups cherry tomatoes, halved
2 large ripe avocados, diced
1 cup sourdough croutons
The Lemon-Basil Vinaigrette
3 tbsp fresh lemon juice
1 tsp lemon zest
1/4 cup fresh basil leaves, torn or chopped
1/2 cup olive oil
1 tsp local honey (just enough to take the sharp edge off the lemon)
1 small clove garlic, finely chopped
Salt and black pepper to taste
Directions
1. Crisp the bacon:Cook the bacon slices in a skillet or oven (400°F) until perfectly crispy. Drain on paper towels, let cool completely, and then roughly chop.
2. Whisk the lemon-basil dressing:In a small bowl or jar, combine the lemon juice, lemon zest, honey, grated garlic, salt, and pepper. Slowly whisk in the olive oil until emulsified. Stir the finely chopped fresh basil ribbons in at the very end so they stay bright green and don't bruise.
3. Chop the greens and veggies: Chop your romaine lettuce into bite-sized pieces. Halve the cherry tomatoes and dice your avocados.
4. Assemble and toss gently: Add the lettuce to a large bowl. Scatter the tomatoes, diced avocado, crispy bacon, and croutons over the top. Pour the Lemon-Basil vinaigrette over everything and toss gently just before serving so the avocado doesn't break down too much.
Tip: If you want an even smoother, brighter green dressing, throw all the vinaigrette ingredients into a small blender or food processor and pulse until the basil is completely incorporated. It will turn a beautiful, vibrant green color!
