Heirloom Tomato & Basil Bruschetta

Heirloom Tomato & Basil Bruschetta

Few things capture summer better than juicy heirloom tomatoes and fragrant basil. This simple bruschetta recipe brings those fresh flavors front and center—perfect for a light snack, starter, or backyard gathering.

Ingredients (Serves 4–6)

4–5 heirloom tomatoes (mixed colors)

1 small garlic clove, minced
Handful of fresh basil, torn or thinly sliced
1 tablespoon extra-virgin olive oil, plus more for brushing
1 tablespoon good-quality balsamic vinegar
Salt & black pepper, to taste
1 baguette or rustic bread, sliced into ½-inch rounds
1 garlic clove, whole (for rubbing)

Instructions

  1. Make the Topping:
Dice the tomatoes and mix with minced garlic, basil, olive oil, balsamic, salt, and pepper. Let sit for 10–15 minutes to marinate.
  2. Toast the Bread:
Brush bread slices with olive oil. Toss in a 300°F oven until golden. Rub with the whole garlic clove while warm.
  3. Assemble:
Spoon the tomato mixture onto the toasts. Top with a few extra basil ribbons and a final drizzle of olive oil if you like. Serve immediately.

Tips

  • Add a layer of soft goat cheese or mozzarella for extra richness.
  • Use cherry heirloom tomatoes if larger ones aren’t available.
  • Sprinkle with flaky sea salt just before serving for a flavor boost.
